Sweet Rolls

1 c. milk

1/4 c. honey

1/4 c. shortening

1 tsp. salt

1 cake compressed yeast

1/2 c. lukewarm water (110°F)

2 eggs

5 c. all-purpose flour

 

Scald milk.  Add honey, shortening and salt.  Soften yeast in lukewarm water and add to milk mixture.  Add beaten eggs and half the flour.  Beat well.  Grease hands and knead on a lightly floured board.  Add remaining flour periodically, kneading until smooth.  Place dough in a lightly greased bowl, turning once to coat.  Cover and let rise in a warm place (85 to 90°) until doubled in size (1 to 1 1/2 hours).  Punch down and form into rolls.  Place rolls on baking sheet and let rise again for about 1 hour.  Bake at 400° to 425° for 20 to 25 minutes.  Brush with honey butter while still warm, and serve.

 

Honey Butter Spread

1 part liquid honey

4 parts butter or margarine

Whip ingredients together and refrigerate to solidify.  Spread on toast, rolls or warm bread to serve.  Refrigerate unused portion.

 

 

Granola Mix

6 c. quick rolled oats

1 c. shredded coconut

1 c. wheat germ

1/2 c. shelled sunflower seeds

3/4 c. cashews (halved)

1/2 c. cooking oil

1/2 c. honey

1/3 c. water

1 1/2 tsp. salt

1 1/2 tsp. vanilla

1 c. raisins

1 c. dried apricots (cut into small pieces)

1 c. dates (cut into small pieces)

In a large bowl, combine oats, coconut, wheat germ, sunflower seeds and cashews.  Mix together oil, honey, water, salt and vanilla.  Pour over oatmeal mixture and stir until coated.  Spread on baking sheet and bake at 350° for 30 minutes, stirring frequently.  Cool and add fruit.  Store in an airtight container till ready for use.  Makes 11 cups.

 

Oatmeal Bread for Breadmaker

1 c. warm water (100°F)

1 Tbsp. oil

1/4 c. honey

1/2 tsp. salt

1/2 c. whole rolled oats

2 1/3 c. bread flour

4 tsp. wheat gluten (optional)

1 tsp. yeast

Place ingredients in bread maker pan in the order listed.  Gluten is optional, but will make for a much lighter texture.  Set bread maker for light crust, basic setting, for a 1 lb. loaf.  Remove bread from machine pan as soon as baking cycle is completed and allow to cool on rack.
